Then, sugar was rare, but Daifuku became more like today’s when sugar was more readily available to people (even though it was still very precious) 200 years ago. Today, you can buy Daifuku Mochi everywhere in Japan, from Japanese sweet shops to convenience stores.
Nearly all daifuku are covered in a fine layer of rice flour (rice starch), corn starch, or potato starch to keep them from sticking to each other or to the fingers. Though mochitsuki is the traditional method of making mochi and daifuku, they can also be cooked in the microwave.
It's a popular Japanese snack usually served with green tea. Daifuku is most commonly filled with red bean paste, but some are filled with white bean paste (Shiroan). There is also mochi which is colored and flavored with kinako (soybean flour), yomogi (Japanese mugwort), matcha green tea powder, or a touch of red food coloring.
