There's a whole section on tofu and tempeh-based dishes, so this is a great book for someone who has perhaps dabbled in tofu cookery, but is looking for more ways to enjoy it. You'll learn to cook with lots of spices, plenty of crunchy peanuts, and loads of fragrant, warming sauces — like chili-garlic sambal. You'll also be inspired and transported by the gorgeous photography from all over Indonesia. He takes you through a handful of recipes for each, from raw to cooked, such as Pumpkin Bolognese, Onion and Pancetta Tart, and Cabbage, Onion and Farro Soup. The book is not specifically vegetarian; some recipes feature meat products in supporting roles, but they're rarely the centerpiece. Instead, the meat is there to bring out the nuanced flavors of the vegetables, which always helps me get excited about eating less meat. Priya Krishna wrote this book with her mom, Ritu, who was a working mother and excellent weeknight cook. The recipes are inspired by their Indian background, but they feel distinctly American. For example, an Indian take on ribollita, in which the Tuscan kale and white bean stew is packed with flavor from a few spices, plus plenty of vegetables, and white-bean stuffed poblano peppers. I'm particularly fond of the feta cooked like saag paneer, which always gets me to eat more spinach than I thought possible in a single sitting. Priya grew up vegetarian, so while there are a few fish and in the book, it is heavily dominated by vegetarian dishes. A lentil, eggplant, and pomegranate stew is great for dinner on Sunday night, and reheats even better for lunch throughout the week. If you're craving meatballs, eggplant and feta kefte are held together with bulgur and offer a delicious and super-filling main dish alongside a kale salad or hefty portion of roasted vegetables. Khan makes Palestinian food feel super approachable, especially for someone who often cooks in an Italian or Mediterranean style, but who might be looking for ways to mix things up or get out of a cooking rut.
